Overnight Oats
Why would anyone think to eat soggy, uncooked oats? Soaking oats with buckwheat groats in an acid medium overnights helps to bring out phytase, an enzyme that digests phytic acid. Phytic acid is present in whole grains and inhibits our systems from absorbing many of the B vitamins and other minerals stored within the grains themselves. Kefir is an acid medium, and buckwheat groats contain more phytase than oats, which is why both are included in this recipe.
You could also soak the oats and buckwheat in water with lemon juice or vinegar, or even coconut milk if needed. Once you’ve made the grains easier digest for your system you can fully reap the benefits of the probiotics the kefir has to offer, the antioxidants and fiber from the berries, and the healthy fats and fiber supplied from the nuts. If you enjoy and can tolerate grains I hope you enjoy this recipe! It’s a great weekday breakfast if you want to start out your day with whole foods. 
*Note: you can make large batches of overnight oats and keep them in the fridge for breakfast all week. I’ve made five at a time and they have kept well throughout the week to feed me each morning!

This is my overnight oat recipe. I eat this most mornings to start my day out with some protein, fiber, antioxidants, healthy fats, and probiotics! Have fun with this base recipe and make it your own.

Ingredients
  • Half cup steel cut oats
  • One tablespoon buckwheat groats
  • Half cup kefir
  • Handfull of frozen berries or other fruit
  • 1 tsp cinnamon
  • Pumpkin seeds or your favorite nut or seed
  • Coconut flakes
  • spoon of raw honey (if you need it sweetened)
Instructions
  1. The night before combine half cup steel cut oats, one tablespoon buckwheat groats, half cup kefir, handful of frozen berries or other fruit, 1 tsp cinnamon
  2. The morning of add pumpkin seeds or your favorite nut or seed, coconut flakes, a spoon of raw honey (if you need it sweetened)
